Baja-Style Rosemary Chicken Skewers
First, you need to make the marinade. Take out a bowl and combine:
- ½ of a small white onion, finely chopped
- 3 minced garlic cloves
- ½ teaspoon of crushed red pepper
- 1 teaspoon of minced rosemary
- 1 teaspoon of crumbled dried Mexican oregano
- ¼ cup of fresh lemon juice
- ¼ cup of extra-virgin olive oil
Take ¼ cup of the marinade out of the bowl and set it aside. Then, take out 2 pounds of boneless, skinless chicken thighs and cut them into 1½-inch pieces. Season them with salt and pepper and toss them in the bowl.
Fire up the grill, take the chicken out of the marinade, and put it on rosemary skewers. Put oil on the grill’s grate and grill the chicken. Turn the chicken as needed, and use the reserved marinade to baste the chicken during the grilling process. Let it cook until it is golden brown. It should take 15 to 20 minutes.
Summer might be hamburger season, but you don’t have to eat red meat to have fun. These salmon burgers prove being healthy tastes great.
Take out a large bowl and add:
- 1 cup of finely chopped red onion
- ¼ cup of thinly sliced fresh basil
- ¼ teaspoon of salt
- ¼ teaspoon of basil
Then, throw in a 1-pound salmon filet that has been skinned and chopped.
Next, take out a small bowl and add 1 tablespoon of hot pepper sauce and a large egg white. Stir it until combined, then combine it with the salmon mixture.
Divide the mixture up into four parts, and create a patty with each portion. Then, put a nonstick skillet on the stove and turn the stove onto medium-high heat. Add cooking spray to the skillet and throw the patties on. Cook each patty for three minutes on each side. Then, put the patties on a bun and serve them up. Stay healthy with the bun as well, so you don’t end up taking in unnecessary calories.
Fresh Corn Cakes with Summer Salsa
Light, healthy, and delicious, fresh corn cakes with summer salsa will get your guests excited about coming over for lunch or dinner. Start by adding some ingredients into a bowl. You need to add:
- ¾ cup of whole-wheat flour
- ½ cup of yellow cornmeal
- 2 teaspoons of baking powder
- ½ teaspoon of salt
- ¼ teaspoon of pepper
Then you need to add some ingredients into a second bowl
- 1 cup of light sour cream
- 2 eggs
- 1 tablespoon of olive oil
Stir it up until it is smooth. Now, add that mixture into the bowl with the flour. You also need to add in 1¼ cup of fresh corn kernels and 2 tablespoons of minced jalapeno. Mix it all up.
Put a nonstick griddle on the stove and heat it up over medium-high heat. Then, divide your mixture into eight portions and shape each portion into a patty. Put the patties on the griddle and cook them for six minutes. Flip them over and cook them for another six minutes.
Finally, you’ll be ready to make your salsa. Take out a bowl and add:
- ½ cup of diced yellow squash
- ¼ cup of green onions
- ¼ cup of chopped basil
- 1½ teaspoons of white wine vinegar
- 1 tablespoon of olive oil
- 1 medium chopped tomato
Mix it all up until it is blended. Then, put the corn cakes on a plate, put the salsa over them, and serve.
